Questo è uno dei piatti da me preferiti in assoluto, il baccala fritto e poi tuffato nel sugo profumato con aglio e prezzemolo.
This is one of the dishes I absolutely prefer, fried codfish dipped in a tomato souce with garlic and parsely.
E’ il piatto che indica l’arrivo dell’inverno, che mangiamo sempre per il giorno dell’immacolata, è una vera delizia, io ne ho fatto una pallida imitazione dell’imitazione. Perdono!
This is the dish which means that winter has come, the dish we always have for the Immacolata’s day (8th December), it is really delicious. What I made is a pale fake! Forgive me!
Ero così contenta che la sfida di questo mese dell’MT-Challenge (una sfida senza premi tra blogger ideata da Ale e Dani di Menù Turistico) fosse il mio adorato baccalà alla livornese (ho scoperto che si chiama così!) e poi… e poi non vuoi che non ho trovato uno straccio di pezzo di baccalà al supermercato? Nemmeno di quelli preammollati. ZERO!!!
I was so happy that this month the MT-challenge (a food blogger challenge created by Ale and Dani of Menù Turistico Blog) was dedicated to my beloved livornese style codfish and then… and then guess what? I did’n’t find a little codfish piece in any supermarket!!! ZERO!!!
E allora come si fa? Si salta la sfida? Nooo! Si fa in modo eretico con i cuori di merluzzo Findus. Perdono, Perdoooono!!! Ma il baccalà non è anch’esso stesso un merluzzo??
And then? What I had to do? Not challenge? No! I decided to challenge with an heretical way, using frozen cod (Findus). Forgive me! But isn’t the codfish a cod himself??
Assolutamente devo dire che il sapore e la riuscita della ricetta sono buoni ed è un ottimo modo per preparare il pesce congelato, ma… non è il baccalà di mia madre. Non appena possibile lo farò, quello vero!!! Stay tuned!
Actually I have to say that the taste and the result of such heretical recipe is good, and this is a very good way to prepare such frozen fish, but… This is not my mother tomato souce with fried codfish. As soon as possible I will prepare it, the REAL ONE! Stay tuned!
Ingredienti – Ingredients:
- tranci di merluzzo (codfish slices)
- farina 00 (white flour)
- una bottiglia di passato di pomodoro (a bottle of tomato sauce)
- uno spicchio di aglio (a garlic clove)
- prezzemolo (parsley)
- due/tre cucchiai di olio (2 or 3 tablespoon of extra virgin oliv oil)
- olio per friggere (frying oil)
- sale e pepe (salt and pepper)
Procedimento – Directions:
- Se utilizzate merluzzo congelato, lasciatelo scongelare in frigo o nel microonde. Infarinate i pezzi di merluzzo e friggeteli in olio ben caldo (possibilmente olio evo) e a fiamma alta.
Should you use frozen cod, let it thaw in the fridge or in the microwawe owen. Then pass it into the flour and fry, if possible in extra virgin olive oil. - Preparare un sugo di pomodoro con olio, aglio e prezzemolo. Quando il sugo è pronto tuffarci dentro i pezzi di merluzzo fritti e cuocere per circa 20/30 min a fiamma bassa.
Prepare a tomato sauce with extra virgin oliv oil, garlic and parsley. When the sauce is ready dip into it the fried fish and cook, for other 20/30 minutes (low heat). - Servire! Ottimo per condirci le linguine e soprattutto per fare la scarpetta!!!
Then serve! The souce is preatty good to dress spaghetti or to dip into the bread and… clean the dish!! (as we say fare la scarpetta!)
