Premessa: era un po’ che pensavo di postare le ricette anche in inglese. Visto che tra i miei followers, con mio grande piacere, ci sono anche persone non italiane, ho deciso di prendere sul serio questo intento e magari, pian piano, riuscire a tradurre tutte le ricette. Certo… all’inizio mi ci vorrà più tempo per scrivere i post, ma voglio in qualche modo ringraziare chi mi segue anche solo per guardare le foto!!!
Premise: I was wondering for a long time to translate my recipes in english. Since there are some not-italian followers, and I’m very glad about that, I decided to stick with that and start translating all the recipes… little by little! It is my way to say “thank you” to people who follow me even if they can only watch the photos!
Sono certa che l’avrete notato: questo blog brulica di dolci, ha una buona concentrazione di primi e pasticceria salata passando per finger food, ma scarseggia di secondi e soprattutto secondi per ricevere! E lo so! Sui secondi sono un po’ zoppicante e soprattutto, come spiego nella pagina dedicata ai Menù (a proposito, l’avete notata?) dovendo accogliere i miei ospiti in cucina (per ora) ho anche il problema degli odori e dover preparare in anticipo alcune cose.
I’m sure you already noticed that in this blog there are a lot of cakes, many pasta-dishes and salad pastry, even finger food, but there are few fish and meat dishes, expecially for the guests. Yes, I know! I have some problems with that and a reason is that I receive my guests in the kitchen (as mentioned here) and I often have to choose dishes to be prepared previously and in a few time.
Ebbene. Questo è un piatto che soddisfa diverse esigenze: cottura non troppo lunga, possibilità di esser preparato in anticipo, è gustoso e di grande effetto pur non richiedendo particolari abilità per essere preparato e portato in tavola. In più si crea anche un delizioso sughetto che invita alla scarpetta. Cosa volete di più da un secondo?
So… here it is a meat dish which satisfy many needs: short cooking time, possibility to be prepared in advance; it is tasty and will surprise your guests; it doesn’t need any particula cooking skill and… there is a delicious sauce to dip in the bread (do you know? in Italy when we use the bread to “CLEAN” the plate we call this doing “fare la scarpetta” [=to do the little shoe!]! Very, very yummy!!!)
Ingredienti (per 4/6 persone) – Ingredients (Serves 4 to 6):

850g lonza di maiale in un unico pezzo (850g one piece boneless loin pork)

1 rametto di rosmarino (1 rosemary sprig)
-
2 spicchi di aglio (2 garlic clove)
-
40g burro (40g butter)
-
3 cucchiai di olio evo (3 tablespoon extra virgin oliv oil)
-
1/2 cipolla (1/2 onion rings)
-
1/2 lit di birra bionda (1 pint lager beer)
-
5 foglie di salvia (5 sage leaves)
-
mezzo misurino brodo granulare (1/2 bouillon)
-
1 cucchiaino di fecola (1 teaspoon potatos starch)
-
5 cucchiaini di panna (io ho usato il latte) (5 teaspoon panna or milk)
-
sale e pepe q.b. (salt and pepper)
Procedimento – Directions:

Praticate qualche taglietto nella polpa della lonza e introducetevi all’interno fettine di aglio e degli aghi di rosmarino, quindi legare la lonza con dello spago da cucina.
Pierce meat with a sharp knife in several places and put into the openings some garlic slices and rosemary leaves. Then tie it with joints. -
Scaldare in un tegame l’olio con il burro, la cipolla tagliata a fettine e la salvia, quindi rosolare la lonza sa tuti i lati. Salare e pepare.
In a casserole heat the oil with butter, onion rings and sage leaves, then brown the loin on all side. Add salt and pepper. -
Ricoprire la lonza con la birra bionda, incoperchiare e lasciare cuocere a fiamma moderata per 20 minuti. Poi togliere il coperchio, alzare la fiamma, aggiungere il dado e proseguire la cottura sino a che pungendo la carne con uno spillo ne uscirà un liquido bianco trasparente.
Add the beer then cover and cook (moderate heat) for 20 minutes. Remove the top, turn up the heat, add the bouillon, and cook until if you pierce the loin you will see a white fluid. -
Quando il sugo si sarà ristretto di circa la metà, aggiungere la fecola sciolta nel latte o nella panna e lasciar addensare la salsa.
When the sauce is half reduced, add the starch melted with the milk and cook, stirriing, until the sauce thickens. -
Estrarre la lonza, liberarla dal filo e tagliatela a fette (questa operazione riesce meglio a freddo, per cui la lonza può essere preparata con largo anticipo. Io comunque l’ho tagliata subito dopo la cottura senza problemi).
Remove the loin from the pan, remove the joints, and cut into slices (you can cut the loin also when it is cold, then you can prepare the recipe in advance) -
Sistemare le fette di lonza in una pirofila su un letto di salsa calda. Ricoprire con altra salsa e infornare per 15 min a 200° coprendo con un foglio di alluminio. Quindi servire. (io ho messo in forno all’arrivo degli ospiti).
Put in a heatproof dish a cup of sauce and the loin slices. Then cover with the remaining sauce. Cover the dish with an aluminium foil and place in the centre of pre heaten oven for 15 minutes (420°F – 220°C). Thes serve it! (I put the loin into owen when my guests arrived!).
